A rare four-hands dining experience is set to take place at EQ’s acclaimed fine-dining restaurant, Sabayon, on Saturday, 26 April 2025. In partnership with Kita Food Festival, the event will unite Sabayon’s Chef de Cuisine Steve Ariffin and JAMPA Phuket’s Executive Chef Rick Dingen for a one-night-only culinary collaboration focused on sustainability and seasonal local produce.
The specially curated seven-course menu is priced at RM650 nett per person and highlights the best of Malaysian and Southeast Asian ingredients, including T’lur caviar, harumanis mango, and the distinctive bael fruit. Expect bold interpretations that reflect both chefs’ commitment to environmental consciousness and flavour-led creativity.
“Too often, ingredients are prized for how far they’ve travelled rather than what they contribute,” said Gerard Walker, General Manager of EQ. “This collaboration celebrates local ingredients elevated by masterful technique – and all set against the spectacular backdrop of the city skyline from Sabayon’s 51st floor.”
Dutch-born Chef Rick Dingen, formerly of Michelin-starred kitchens including La Rive and De Kas in the Netherlands and Savelberg in Bangkok, now leads JAMPA, a restaurant widely respected for its commitment to live-fire cooking and sustainable sourcing. His culinary ethos – formed through close relationships with farmers, foragers, and producers – shines through in every dish, as does his signature fire-cooking style.
Sabayon, meanwhile, continues to set the benchmark for Malaysian fine dining. Under Chef Steve’s leadership, the restaurant has earned accolades from Tripadvisor, Wine Spectator, and discerning diners alike. Sabayon’s home at EQ – a GBI Gold-certified green building – further underscores the evening’s sustainability focus.
JAMPA operates an organic farm to reduce its environmental impact, while EQ’s architecture and operations align with ASEAN’s Green Hotel Standards for 2025. This collaboration is not only a feast but a statement about the future of dining in the region.
