In early 2015, the F&B scene was deluged with a wave of salted egg yolks. There seemed to be salted egg yolk dishes cropping up in a majority of restaurants, which creatively incorporated the ingredient into a variety of dishes. While the hype has settled down a fair bit, the love for salted egg yolk treats is as strong as ever – the flavour has picked up some hardcore fans.

Go-Getter is also nurturing a reputation for inventive interpretations of waffles. For something in between sweet and savoury, try a charcoal waffle, drizzled with salted caramel sauce and poured over with a rich and smooth salted egg yolk sauce, complemented by vanilla ice cream.

Pastas are worth your attention here – we sampled two Asian-inflected seafood spaghetti dishes, both of which proved encouragingly tasty. Pan-fried prawns come soaked in a salted egg yolk sauce that’s rich and flavoursome. We happily devoured every bite of this addictive preparation.

Din Tai Fung specialises in deliciously steamy and oozy xiao long baos, little parcels filled with their signature pork filling, or chicken, prawn, red bean, chocolate, and even salted egg yolk. The salted egg yolk bao is filled with smooth golden, salty, lava-like egg yolk that oozes out the moment you bite into it. It’s not to be missed, especially for fans of salted egg yolk.

Softcore delivers what its name suggests, dishing out an intriguingly diverse range of lava cakes with molten centres. Temptations include a matcha and white chocolate cake with candied calamansi, peanut butter and filo banana fritter, and one with a salted egg yolk filling and sprinkle of crunchy cornflakes and curry leaves.

WhupWhup has clearly put a lot of effort into presenting an interesting menu that spans French and other influences. Nu’ Yolk features fresh, tender scallops with a sweet, custard-like salted egg yolk puree and shaved parmesan.

Our favourite order turned out to be one of the least-heralded offerings: Sliced lotus roots, deep-fried with a coating of salted egg yolk and butter. Hot and fresh, crunchy and deliciously flavoursome; we’d happily have this again.

Possible orders include beautifully crafted vanilla cupcakes with a centre of salted egg yolk custard (relatively sweet rather than savoury), chocolate cupcakes with a frosting of green tea buttercream and a filling of green tea custard, black sesame buttercream cupcakes, and more. Moist and rich (perfect if you love your cupcakes luscious), but not overly sugary or cloying.
