Confit of lamb breast, perhaps not a part often showcased, fatty & fleshy, full-bodied in flavour, its layers evoking ‘siu yok,’ served with spring onions & marsala & onion puree. It’s one of the simplest-looking of Dewakan’s dining divinities, but it’s no less sumptuous.
