The recently launched Sabayon x Penfolds collaboration at EQ brings together one of the world’s most prestigious, well-known wine brands with one of Kuala Lumpur’s most renowned restaurants. Having commenced on 19 June 2024, this six-month partnership features a special prix fixe five-course menu, meticulously crafted by Sabayon’s talented Chef de Cuisine Steve Ariffin, with each course perfectly paired with a selection of Penfolds wines.

Penfolds, one of Australia’s most renowned and respected wine producers, has a storied history dating back to 1844. Founded by Dr. Christopher and Mary Penfold, the winery began with the planting of vines around their property in Magill, South Australia. Initially focused on producing fortified wines for medicinal purposes, Penfolds quickly expanded its repertoire, pioneering innovative winemaking techniques that have led to an impressive portfolio of premium wines.

Among their most celebrated offerings are the iconic Grange, first crafted in the 1950s, and the Bin series, which showcases the diversity and richness of Australian terroir. Over the decades, Penfolds has garnered numerous awards and accolades, earning a reputation for excellence and consistency. The brand’s commitment to quality, experimentation, and tradition has made Penfolds a favorite among wine enthusiasts and collectors worldwide, solidifying its status as a global symbol of Australian winemaking prowess.

For their collaboration with Sabayon, the menu begins with a delightful amuse-bouche trio of spring seafood tart, potato pave, and spiced cauliflower, paired with the citrusy Penfolds Bin 51 Riesling, Eden Valley 2022. Following this, Kodawari eggs, known for their vibrant orange yolks from chickens fed on Japanese algae, are complemented by Penfolds Bin 311 Chardonnay, South Australia 2018, noted for its pronounced rock melon and white peach flavors with a strong structure.

For the third course, the Penfolds Bin 23 Pinot Noir, Adelaide Hills 2020 accompanies the goose liver. This wine, featuring raspberry and strawberry notes, layers exquisitely with the foie gras, with a slight smokiness from oak barrique aging adding a toasty richness. Guests have a choice of three main dishes: capon, lamb, or tiger grouper. Each is paired with Penfolds Bin 28 Kalimna Shiraz, South Australia 2021, a full-bodied shiraz offering velvety shades of chocolate and espresso that enhance both red meat and firmer fish.

The dessert, a dark chocolate cremeux, is paired with Penfolds Bin 138 Shiraz Grenache Mataro, Barossa Valley 2019. This wine, inspired by the Southern Rhône blends, offers a rich and heady perfume with warm spices like cardamom and paprika, making it a perfect ending to the meal.

This collaboration marks 180 years of innovative winemaking at Penfolds, celebrating its legacy from the first vines planted by Dr. Christopher and Mary Penfold in 1844, and highlighting its continued commitment to quality and experimentation.

The Sabayon x Penfolds collaboration will run until 19 December 2024. The five-course dinner is priced at RM748+ per person. Additionally, wines from Penfolds’ Icon and Luxury ranges will be available by the glass, thanks to the Coravin system.
