Anyone who has ever been to Babe and enjoys champagne is probably bubbling with excitement now. Michelin-starred chef Jeff Ramsey is the mastermind behind Babe, and also Champagne brand Perrier-Jouët’s Chef Ambassador for Malaysia. To celebrate the partnership, a very special Babe x Perrier-Jouët ‘Art of the Wild’ menu will be available for Autumn 2018. We had the pleasure of trying a 9-course rendition of the special menu, and highly recommend you do, too. Take a look at some of the dishes below.

Caramelised Ankimo with Passionfruit Ponzu Granita
Uni, Ootoro, Botan Ebi Tartlette

Starting with the exclusive Perrier-Jouët Belle Époque 2008, we were served the Crystal Gyoza (translucent gyoza dumpling, cabbage soup), Caramelised Ankimo with Passionfruit Ponzu Granita (torchon of steamed buttery monkfish liver), and Uni, Ootoro, Botan Ebi Tartlette (thin tart shell with Japanese seafood, koji, and soy gelee); which was a strong contender for ‘favourite dish of the night.’

Next, the Perrier-Jouët Grand Brut was served with three more delectable creations. These include the ‘Babendazs’ – a playful twist of a foie gras monaka sandwich; ‘Steak’ Sandwich with braised beef tongue, gherkins, and Wagyu tartare; and the Nagano Walnut Soba – cold buckwheat noodles with a 7-ingredient herb, root, and seed condiment. The Babendazs was easily the most memorable dish of the night, particularly for those who enjoy foie gras, while the ‘Steak’ Sandwich is a good way to explain Babe’s concept in a nutshell – nothing is what it seems; expect the unexpected.

Dinner ended on a sweet and sparkling note with the Perrier-Jouët Blason Rosé. The last three courses comprised of the Yuan Miso Salmon with Yuzu Cream and Daun Kaduk; Yoghurt-Cured Chicken Breast with Satsuma Imo, Carrot, and Quinoa; and the Martell VSOP Aged in Red Barrels Mont Blanc – a satisfying creme made with Martell VSOP-infused chestnuts and vanilla.

This special collaboration dinner is called ‘Art of the Wild’, and will be available at Babe from 26 October to 11 November 2018. Diners can choose from The Excursion (6-course), The Journey (10-course), or The Voyage (11-course) priced at RM220++, RM350++, and RM680++ respectively.
